Garlic Tomato Shrimp Scampi is a flavorful twist on the classic dish, featuring juicy shrimp sautéed in garlic and simmered in a light tomato-wine sauce. It’s quick, elegant, and perfect served over pasta or crusty bread.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1.5 cups cherry or grape tomatoes, halved
  • 1/3 cup dry white wine (Pinot Grigio or Sauvignon Blanc)
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh parsley, chopped
  • 8 oz linguine or spaghetti, cooked (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook pasta according to package instructions if using. Drain and set aside.
  2. In a large skillet, heat olive oil and butter over medium heat.
  3. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add halved cherry tomatoes and cook for 4–5 minutes until softened and juicy.
  5. Pour in white wine and bring to a simmer. Let reduce slightly for about 3 minutes.
  6. Season with salt, black pepper, and red pepper flakes if using.
  7. Add shrimp in a single layer and cook for 2–3 minutes per side until pink and opaque.
  8. Stir in lemon juice and chopped parsley.
  9. Toss with cooked pasta or serve over crusty bread or rice.
  10. Garnish with extra parsley and Parmesan cheese, if desired.

Notes

  • Use canned diced tomatoes if fresh are unavailable.
  • For a creamy version, add a splash of cream after wine reduces.
  • Substitute wine with broth and extra lemon juice for an alcohol-free version.
  • Serve over pasta, rice, bread, or zoodles for variety.
