Garlic Shrimp Skillet with Cherry Tomatoes is a quick and vibrant one-pan dish featuring tender shrimp, blistered cherry tomatoes, and a garlicky olive oil sauce. Bursting with Mediterranean flavors, it’s perfect for a light dinner or an easy appetizer.

Ingredients

  • 1 lb raw shrimp (peeled and deveined)
  • 1.5 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add cherry tomatoes and cook for 5–7 minutes, stirring occasionally, until blistered and softened.
  4. Add shrimp, season with salt, pepper, and red pepper flakes. Cook for 2–3 minutes per side until pink and opaque.
  5. Remove from heat, drizzle with lemon juice, and sprinkle with fresh parsley.
  6. Serve immediately with the garlicky tomato sauce spooned over the shrimp.

Notes

  • Serve over rice, pasta, or with crusty bread to soak up the sauce.
  • Use grape tomatoes if cherry tomatoes are unavailable.
  • A splash of white wine or broth can be added for extra sauce.
