Ingredients
1 large head cauliflower, cut into florets
3 garlic cloves, peeled
2 tbsp unsalted butter or olive oil
1/4 cup heavy cream, milk, or plant-based alternative
1 tsp salt
1/2 tsp black pepper
Optional: 2 tbsp cream cheese or Parmesan cheese
Chives or fresh herbs, for garnish
Instructions
Bring a large pot of salted water to a boil.
Add cauliflower florets and garlic. Boil 10–12 minutes until very tender.
Drain well and let sit briefly to release excess moisture.
Transfer to a food processor or large bowl with butter, cream, salt, and pepper.
Blend or mash until smooth and creamy.
Taste and adjust seasoning. Stir in optional cream cheese or Parmesan if desired.
Serve warm, garnished with chives or herbs.
Notes
Drain cauliflower thoroughly to avoid watery mash.
Use roasted garlic for deeper flavor.
For a vegan version, use olive oil and dairy-free milk.
Best blended in a food processor for smooth texture.
