Ingredients

  • 8 oz. pasta (linguine, spaghetti, or fettuccine works best)

  • 1 lb. large shrimp, peeled and deveined

  • 4 tbsp unsalted butter, divided

  • 4 cloves garlic, minced

  • 1/2 cup chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

  • Red pepper flakes (optional)

  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.

  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes on each side, until pink and opaque. Remove shrimp and set aside.

  • In the same skillet, melt the remaining butter. Add the minced garlic and cook for 1 minute until fragrant.

  • Pour in the chicken broth and simmer for 2-3 minutes, allowing the flavors to combine and reduce slightly.

  • Add heavy cream, Parmesan cheese, and lemon juice. Stir until the cheese melts and the sauce becomes creamy.

  • Return shrimp to the skillet, toss to coat in the sauce, and cook for 1 minute.

  • Add cooked pasta to the skillet, tossing to combine everything well. Adjust seasoning with salt, pepper, and red pepper flakes.

  • Garnish with fresh parsley and serve immediately.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 2 days. Reheat with a splash of chicken broth or water to loosen the sauce.

  • Substitutions: Use gluten-free pasta for a gluten-free version or substitute heavy cream with coconut milk for a dairy-free option.

  • Variations: Add extra red pepper flakes for a spicy kick or toss in vegetables like spinach or sun-dried tomatoes for added texture.
