Ingredients

1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons butter

3 cloves garlic, minced

1 tablespoon olive oil

Juice and zest of 1 lemon

1 teaspoon dried thyme or fresh thyme leaves

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Season chicken with salt, pepper, and thyme. Cook for 6–8 minutes until browned and cooked through. Remove from skillet.

  3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.

  4. Add asparagus, cook for 3–4 minutes until just tender. Season with salt and pepper.

  5. Return chicken to the skillet. Add lemon juice and zest, and stir everything to combine.

  6. Cook for 2 more minutes to meld flavors.

  7. Garnish with parsley and serve with lemon wedges if desired.
