Ingredients
4 boneless, skinless chicken breasts or thighs
1.5 lbs baby potatoes or Yukon gold potatoes, halved or quartered
Salt, to taste
Black pepper, to taste
1 teaspoon paprika
2 tablespoons olive oil (divided)
2 tablespoons butter
4 garlic cloves, minced
1 teaspoon Italian seasoning or dried herbs (optional)
Fresh parsley, chopped (optional, for garnish)
Instructions
Cut the potatoes into halves or quarters. Season with salt, pepper, and a pinch of paprika.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes and cook for 10–12 minutes, stirring occasionally, until golden and fork-tender. Remove and set aside.
Season chicken with salt, pepper, and paprika on both sides.
In the same skillet, add remaining olive oil and sear chicken for 5–6 minutes per side, or until golden brown and cooked through. Remove and set aside.
Reduce heat to medium. Add butter and let it melt, then stir in minced garlic and sauté for 30 seconds until fragrant.
Return chicken and potatoes to the skillet. Toss to coat everything in the garlic butter sauce.
Sprinkle with Italian seasoning or dried herbs if using. Simmer for 1–2 more minutes to combine flavors.
Garnish with chopped parsley and serve hot.
Notes
Cut potatoes small for faster, even cooking.
Add a splash of broth, lemon juice, or white wine for extra sauce flavor.
Use bone-in chicken thighs for added richness.
Stir in spinach or green beans for a complete one-pan meal.
Top with shredded Parmesan or mozzarella during the last few minutes of cooking for a cheesy finish.
