Ingredients

  1. 4 large flour tortillas (or gluten-free/whole wheat/spinach wraps)
  2. 1 cup cooked protein (e.g., grilled chicken, tofu, black beans, or seasoned tempeh)
  3. 1 cup cooked grains (rice, quinoa, or noodles)
  4. 1 cup shredded lettuce or cabbage
  5. 1/2 cup diced tomatoes
  6. 1/2 cup cucumber, carrot, or bell pepper (thinly sliced)
  7. 1/2 cup roasted sweet potato or corn (optional)
  8. 1/4 cup hummus, guacamole, or tzatziki
  9. 1/4 cup sauce (e.g., sriracha mayo, peanut sauce, or salsa)
  10. 2 tbsp fresh herbs (cilantro, parsley, or mint)
  11. 1/2 cup shredded cheese or dairy-free alternative (optional)

Instructions

Warm the tortillas in a skillet or microwave until soft and pliable.

  1. Spread a base layer of hummus, guacamole, or tzatziki in the center of each tortilla.
  2. Add protein, grains, vegetables, and any additional toppings evenly across the middle.
  3. Drizzle with your preferred sauce and sprinkle with fresh herbs and cheese if using.
  4. Fold in the sides of the tortilla, then roll tightly from the bottom to enclose the filling.
  5. Optional: Toast the burrito in a dry skillet over medium heat for 2–3 minutes per side until golden and crispy.
