Perfect for summer gatherings, birthdays, or any sweet craving, this easy-to-make treat is customizable with your favorite fruits and can be prepared ahead of time for convenience.

Ingredients

  • 1 package sugar cookie dough (homemade or store-bought)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups assorted fresh fruits (strawberries, blueberries, kiwi, grapes, pineapple, etc.)
  • 2 tbsp apricot preserves or honey (for glaze)

Instructions

  • Prepare the crust – Roll out the sugar cookie dough onto a greased pizza pan or baking sheet. Bake as directed (typically 12-15 minutes at 350°F/175°C). Let it cool completely.
  • Make the frosting – In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Assemble the pizza – Spread the frosting evenly over the cooled cookie crust.
  • Add the fruit – Arrange sliced fruits in a decorative pattern on top of the frosting.
  • Glaze the fruit – Warm the apricot preserves or honey and lightly brush over the fruit for a glossy finish.
  • Chill and serve – Refrigerate for at least 30 minutes before slicing and serving.

Notes

  • Use store-bought sugar cookie dough for a quicker version.
  • For extra freshness, brush apples, pears, or bananas with lemon juice to prevent browning.
  • Try different crust bases like brownies, shortbread, or graham crackers.
  • Store leftovers in the refrigerator for up to 3 days.
