A Frittata is a classic Italian egg dish that’s baked to perfection with vegetables, cheese, and optional meats. Similar to a crustless quiche, it’s hearty yet light, making it perfect for breakfast, brunch, or even a quick dinner. It’s versatile, delicious warm or cold, and easy to customize with whatever ingredients you have on hand.

Ingredients

  • 8 large eggs
  • 1/4 cup milk or cream
  • 1 tablespoon olive oil or butter
  • 1/2 cup onion, chopped
  • 1/2 cup bell peppers, diced
  • 1 cup spinach or other greens
  • 1/2 cup cooked bacon, sausage, or ham (optional)
  • 1/2 cup shredded cheese (cheddar, mozzarella, feta, or goat cheese)
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as parsley or chives)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil or butter over medium heat. Add onion and bell peppers; sauté for about 5 minutes until softened.
  3. Add spinach or other greens and cook until wilted. Stir in any cooked meat, then remove from heat.
  4. In a bowl, whisk together eggs, milk or cream, salt, pepper, and herbs if using.
  5. Pour the egg mixture over the vegetables and meat in the skillet. Sprinkle cheese evenly over the top.
  6. Cook on the stovetop for 2–3 minutes until the edges start to set, then transfer the skillet to the oven.
  7. Bake for 10–15 minutes, or until the center is set and slightly puffed.
  8. Let rest for 5 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use pre-cooked meats and sauté vegetables to remove excess moisture.
  • For extra fluffiness, add a splash of cream to the eggs.
  • Don’t overbake — remove from the oven as soon as the center sets.
  • Perfect for meal prep — store in the fridge or freeze individual slices.
  • Serve with toast, salad, or roasted potatoes for a complete meal.
