Fried zucchini chips are thin, crispy rounds of breaded zucchini that are deep-fried to golden perfection. Perfect as an appetizer, snack, or side dish, they’re easy to make and delicious when served with your favorite dipping sauces.

Ingredients

  • 2 medium zucchini, thinly sliced (about to ¼ inch thick)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 2 tbsp milk or buttermilk
  • 1 cup breadcrumbs or panko (plain or seasoned)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Vegetable oil, for frying

Instructions

  1. Slice zucchini into thin rounds and pat dry with paper towels.
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs and milk, and one with breadcrumbs, salt, pepper, garlic powder, and optional Parmesan.
  3. Dredge each zucchini slice in flour, dip in egg mixture, then coat with breadcrumbs.
  4. Heat vegetable oil in a deep skillet or saucepan to 350°F (175°C).
  5. Fry zucchini slices in batches for 2–3 minutes per side until golden brown and crispy.
  6. Remove with a slotted spoon and drain on paper towels. Season with salt while hot.
  7. Serve immediately with dipping sauce of your choice.

Notes

  • For extra crispiness, use panko breadcrumbs.
  • Let coated zucchini rest for 10 minutes before frying to help the coating stick.
  • Pat zucchini slices dry before breading to prevent sogginess.
