Ingredients

  1. 2 tablespoons olive oil
  2. 1 onion, chopped
  3. 3 cloves garlic, minced
  4. 6 cups ripe tomatoes, chopped (or canned whole tomatoes)
  5. 2 cups vegetable or chicken broth
  6. 1 teaspoon sugar (optional)
  7. Salt and pepper to taste
  8. Fresh basil for garnish
  9. Optional: cream or coconut milk for creaminess

Instructions

Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened and fragrant, about 5 minutes.

  1. Stir in chopped tomatoes and cook for 10 minutes until they break down.
  2. Pour in broth, add sugar if using, and bring to a boil. Reduce heat and simmer for 15 minutes.
  3. Use an immersion blender or transfer to a blender to puree until smooth.
  4. Taste and adjust salt and pepper. Add cream or coconut milk if desired.
  5. Garnish with fresh basil and serve hot or chilled.
