Fresh Tomato Sauce is a vibrant, homemade Italian-inspired sauce made with ripe tomatoes, garlic, olive oil, and fresh herbs. Naturally sweet and rich, it’s perfect for pasta, pizza, or as a base for your favorite dishes.

Ingredients

  • 2 lbs fresh ripe tomatoes (Roma or plum preferred)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped (optional)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1 tsp sugar (optional, to balance acidity)
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Bring a large pot of water to a boil. Score a small “X” on the bottom of each tomato.
  2. Blanch tomatoes for 30–60 seconds until skins loosen, then transfer to an ice bath. Peel and core the tomatoes, then chop or crush.
  3. Heat olive oil in a large skillet or saucepan over medium heat. Sauté garlic (and onion, if using) until fragrant and softened.
  4. Add chopped tomatoes, salt, pepper, sugar (if using), and red pepper flakes. Stir to combine.
  5. Simmer uncovered for 20–30 minutes, stirring occasionally, until the sauce thickens and flavors develop.
  6. Stir in fresh basil during the last few minutes of cooking.
  7. Use immediately or let cool before storing.

Notes

  • Use ripe, in-season tomatoes for the best flavor.
  • Peeling tomatoes creates a smoother sauce, but can be skipped for a rustic texture.
  • Simmer longer for thicker sauce; blend for a smooth consistency.
  • Freeze in portions for easy meal prep later.
