Ingredients

Dry Ingredients:

Vanilla yogurt

Instructions

  • In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg.

  • In another bowl, beat together the heavy cream, vanilla yogurt, and egg until smooth.

  • Combine the wet and dry ingredients just until mixed. Fold in the diced peaches gently.

  • Heat oil in a deep fryer or heavy-bottomed pan to 375°F (190°C).

  • Drop spoonfuls of batter into the hot oil, frying in batches. Cook each fritter for about 5 minutes, turning to brown evenly.

  • Remove with a slotted spoon and drain on paper towels.

  • For the glaze, whisk together confectioners’ sugar, vanilla extract, and peach juice (if using) until smooth.

  • Drizzle the glaze over warm fritters. Let set before serving.
