French Toast Casserole is a comforting breakfast bake made with cubed bread soaked in a cinnamon-vanilla custard, baked until golden and served warm. It’s ideal for brunches, holidays, and make-ahead breakfasts.

Ingredients

  • 1 loaf day-old bread (French, brioche, or challah), cut into 1-inch cubes
  • 8 large eggs
  • 2 cups milk (or half-and-half)
  • 1/2 cup heavy cream (optional)
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter (for greasing pan)
  • Optional toppings: powdered sugar, maple syrup, fresh berries, streusel topping

Instructions

  1. Grease a 9×13-inch baking dish with butter.
  2. Place cubed bread evenly into the prepared baking dish.
  3. In a large bowl, whisk together eggs, milk, cream (if using), granulated sugar, brown sugar, vanilla, cinnamon, and salt.
  4. Pour the custard mixture over the bread cubes, pressing down gently to soak all the bread.
  5. Cover and refrigerate for at least 30 minutes or overnight.
  6. Preheat oven to 350°F (175°C).
  7. If using a topping or streusel, sprinkle it evenly over the casserole.
  8. Bake uncovered for 45–55 minutes, until golden brown and the center is set.
  9. Allow to cool for 5–10 minutes. Serve warm with desired toppings.

Notes

  • Day-old bread works best to absorb the custard without becoming soggy.
  • Overnight chilling enhances flavor and texture.
  • For a crispier top, broil for the last 2–3 minutes.
  • Use a knife or toothpick to check for doneness—the center should be set, not wet.
