French Onion Beef Casserole is a hearty, comforting bake made with savory ground beef, caramelized onions, creamy sauce, tender noodles, melted cheese, and a crispy French fried onion topping. It’s like French onion soup turned into a satisfying main dish.

Ingredients

  • 1 lb ground beef
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 12 oz egg noodles or pasta of choice
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • Salt and black pepper to taste
  • 2 tbsp olive oil or butter
  • 1 1/2 cups shredded Gruyère or Swiss cheese, divided
  • 1 1/2 cups French fried onions
  • Optional: chopped fresh thyme or parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook noodles according to package directions until al dente. Drain and set aside.
  3. In a large skillet, heat oil or butter over medium heat. Add sliced onions and cook for 20–25 minutes until deeply golden and caramelized.
  4. Add garlic and cook for 1 minute more. Remove onions from skillet and set aside.
  5. In the same skillet, cook ground beef until browned. Drain excess fat.
  6. Stir in cream of mushroom soup, sour cream, beef broth, Worcestershire sauce, salt, and pepper. Mix until smooth.
  7. Return onions to the pan and add the cooked noodles and half the shredded cheese. Stir to combine.
  8. Transfer the mixture to a greased 9×13-inch baking dish.
  9. Top with remaining cheese and French fried onions.
  10. Bake uncovered for 20–25 minutes, or until bubbly and golden on top.
  11. Let rest 5 minutes before serving. Garnish with fresh thyme or parsley if desired.

Notes

  • Use ground turkey or chicken for a lighter variation.
  • Add sautéed mushrooms with the onions for added depth.
  • Try provolone or mozzarella if you don’t have Gruyère or Swiss.
  • Freeze before baking without the French fried onions and add them fresh before cooking.
  • Use leftover roast beef instead of ground beef for a rustic version.
