Fiesta Chicken and Rice Casserole is a one-dish Tex-Mex inspired meal loaded with tender chicken, rice, beans, corn, and cheese. It’s comforting, flavorful, and perfect for weeknights or meal prep.

Ingredients

  • 2 cups cooked chicken (shredded or diced)
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 can (10 oz) Rotel or diced tomatoes with green chilies
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 1 1/2 cups shredded cheddar or Mexican cheese blend
  • Optional: chopped green onions, for garnish
  • Optional: chopped cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, rice, black beans, corn, Rotel, sour cream, and taco seasoning. Stir until well mixed.
  3. Transfer the mixture to a greased 9×13-inch baking dish and spread evenly.
  4. Sprinkle the shredded cheese evenly over the top.
  5. Bake uncovered for 20–25 minutes, until the cheese is melted and bubbly.
  6. Remove from the oven and let it rest for 5 minutes.
  7. Garnish with chopped green onions and cilantro if desired, then serve.

  • Use Greek yogurt instead of sour cream for a healthier alternative.
