Feta Marinated Chicken Souvlaki

Tender chicken pieces marinated in a creamy feta, lemon, and herb mixture, then grilled to juicy perfection. This Mediterranean-inspired souvlaki is flavorful, fresh, and perfect for wraps, salads, or platters.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into chunks
  • 1/2 cup crumbled feta cheese
  • 1/3 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine feta, Greek yogurt, olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Mix until well blended.
  2. Add chicken pieces and toss to coat thoroughly in the marinade.
  3. Cover and refrigerate for at least 1 hour, or up to 4 hours.
  4. If using wooden skewers, soak in water for 20–30 minutes before grilling.
  5. Thread marinated chicken onto skewers, leaving slight space between pieces.
  6. Preheat grill or grill pan over medium-high heat.
  7. Cook skewers for 10–12 minutes, turning occasionally, until chicken reaches 165°F (74°C).
  8. Remove from heat and let rest a few minutes before serving.

Notes

  • Chicken thighs provide extra juiciness.
  • Bake at 400°F (200°C) for 18–22 minutes if not grilling.
  • Store leftovers refrigerated for up to 3 days.
  • Air fry at 380°F (193°C) for 12–15 minutes if desired.
  • Serve with pita, rice, or Greek salad for a complete meal.
