Ingredients

  • 300g fresh strawberries
  • 2 tablespoons sugar (optional)
  • 200ml double cream
  • 1 teaspoon vanilla extract
  • 4 meringue nests (store-bought or homemade)

Instructions

  • Wash the strawberries thoroughly and remove the stems. Slice them into quarters or smaller pieces. If the strawberries aren’t sweet, sprinkle them with sugar and let sit for 10-15 minutes to macerate.
  • In a mixing bowl, whip the double cream and vanilla extract until soft peaks form.
  • Break the meringue nests into large chunks and gently fold them into the whipped cream.
  • Add the prepared strawberries and gently stir everything together, ensuring the meringue, cream, and strawberries are well combined without overbreaking the meringue.
  • Serve immediately, or layer the mixture into individual bowls for a structured presentation. Garnish with extra strawberry slices.

Notes

  • Eton Mess is best served fresh to preserve the crispiness of the meringue.
  • Variations include using other berries, vegan alternatives, or adding a splash of liqueur for an adult twist.
  • If storing, separate the components and assemble right before serving.
