Epic Chunky Beef and Mushroom Pie is a hearty comfort dish made with tender chunks of beef and earthy mushrooms simmered in a rich savory gravy and topped with a golden, flaky pastry crust. The slow-cooked filling develops deep flavor that pairs perfectly with buttery puff pastry, making it a satisfying meal for family dinners or special occasions.

Ingredients

  • 2 lbs beef chuck, cut into large chunks
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 carrots, diced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter
  • 1 puff pastry sheet
  • 1 egg, beaten
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large pot over medium-high heat.
  3. Add the beef chunks and brown them on all sides, then remove and set aside.
  4. In the same pot, cook the chopped onion until softened.
  5. Stir in the garlic and cook for about 1 minute until fragrant.
  6. Add sliced mushrooms and diced carrots, cooking until slightly softened.
  7. Stir in tomato paste and cook for 1–2 minutes to deepen the flavor.
  8. Sprinkle flour over the mixture and stir well to coat the ingredients.
  9. Slowly pour in the beef broth while stirring to create a thick gravy.
  10. Add Worcestershire sauce, thyme, bay leaves, salt, and black pepper.
  11. Return the beef to the pot and bring the mixture to a gentle simmer.
  12. Cover and cook on low heat for 1½–2 hours until the beef becomes tender and the sauce thickens.
  13. Remove bay leaves and transfer the filling into a baking dish.
  14. Roll the puff pastry over the top of the dish and trim any excess.
  15. Brush the pastry with beaten egg.
  16. Bake for 25–30 minutes until the pastry is golden and crisp.
  17. Garnish with fresh parsley and allow the pie to rest slightly before serving.

Notes

  • Allow the filling to cool slightly before adding the pastry to prevent sogginess.
  • A splash of red wine can be added while simmering for deeper flavor.
  • Serve with mashed potatoes, roasted vegetables, or steamed greens.
