A popular Indian bakery-style snack made with flaky puff pastry filled with a spicy onion masala and hard-boiled eggs. These egg puffs are crispy, flavorful, and perfect for tea-time or gatherings.

Ingredients

  • 1 pack puff pastry sheets (store-bought or homemade)
  • 34 hard-boiled eggs
  • 2 large onions, finely sliced
  • 1 green chili, finely chopped (optional)
  • 1 tsp ginger-garlic paste
  • 68 curry leaves (optional)
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 12 tbsp oil
  • 1 egg yolk (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pan, heat oil and sauté onions until golden brown.
  3. Add ginger-garlic paste, green chilies, curry leaves, turmeric, red chili powder, garam masala, and salt. Cook until fragrant and well-blended.
  4. Slice hard-boiled eggs into halves or quarters.
  5. Roll out the puff pastry sheets and cut into equal-sized rectangles or squares.
  6. Place a spoonful of the masala in the center of each pastry piece and top with a piece of boiled egg.
  7. Fold the pastry to form a parcel and seal the edges gently.
  8. Brush the tops with egg yolk for a golden finish.
  9. Bake for 20–25 minutes or until the puffs are golden and crispy.

Notes

  • Let the masala cool before adding it to the pastry to avoid soggy bottoms.
  • Customize the filling with cheese, veggies, or spices to suit your taste.
  • For a vegan version, replace eggs with sautéed vegetables and skip the egg wash.
  • Use cold puff pastry for better puffing results.
