Easy Yogurt Cake is a moist, fluffy, and versatile treat made with simple ingredients and no mixer required. Perfect for breakfast, snacks, or dessert, it comes together quickly and keeps well for days.

Ingredients

  • 1 cup plain yogurt (whole milk or Greek-style)
  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1 tbsp lemon or orange zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round or loaf pan.
  2. In a large bowl, whisk together yogurt, sugar, eggs, and vanilla until smooth.
  3. Add oil and mix until fully incorporated.
  4. In a separate bowl, whisk together flour, baking powder, salt, and zest (if using).
  5. Gradually add dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
