Easy vinegar coleslaw is a crisp and tangy salad made with fresh cabbage and a light dressing, perfect for balancing rich or grilled dishes.

Ingredients

  • 4 cups green cabbage (shredded)
  • 1 cup red cabbage (optional, shredded)
  • 1 cup carrots (grated or julienned)
  • 1/4 cup apple cider vinegar or white vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon sugar or honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon celery seeds (optional)
  • 1/4 cup onion (optional, thinly sliced)

Instructions

  1. Finely shred the cabbage and place it in a large bowl.
  2. Add grated carrots and sliced onion if using.
  3. In a separate bowl, whisk together vinegar, olive oil, sugar or honey, salt, black pepper, and celery seeds.
  4. Pour the dressing over the cabbage mixture.
  5. Toss well to coat evenly.
  6. Let sit for 15–20 minutes to allow flavors to meld and cabbage to soften slightly.
  7. Toss again before serving and adjust seasoning if needed.

Notes

  • Add bell peppers or parsley for extra color and freshness.
  • Increase sugar or honey for a sweeter version.
  • Add Dijon mustard for extra depth of flavor.
  • Store in the refrigerator for up to 3 days and stir before serving.
  • Best served fresh for maximum crunch.
