Easy Vegan Taquitos are crispy, flavorful, and completely plant-based. Rolled with a seasoned bean and veggie filling, then baked or air-fried to perfection, these taquitos make a satisfying snack, appetizer, or meal that’s both healthy and crave-worthy.

Ingredients

  • 10 corn tortillas
  • 1 tbsp olive oil or avocado oil (for brushing or spraying)
  • 1 1/2 cups cooked black beans or refried beans
  • 1/2 cup diced onion
  • 2 cloves garlic (minced)
  • 1/2 cup mashed sweet potato or potato (optional)
  • 1 tbsp taco seasoning (or 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp oregano)
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • 1/2 cup vegan cheese shreds (optional)
  • Fresh cilantro (chopped, for garnish)
  • For serving (optional): Salsa or pico de gallo, guacamole or sliced avocado, vegan sour cream or cashew cream

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  2. In a skillet over medium heat, sauté onion and garlic for 2–3 minutes until fragrant.
  3. Add beans, mashed sweet potato (if using), and taco seasoning. Stir well and cook for 3–5 minutes, mashing lightly with a fork.
  4. Warm tortillas in the microwave or skillet until pliable.
  5. Place 2–3 tablespoons of filling in each tortilla, sprinkle vegan cheese if desired, and roll tightly.
  6. Place seam-side down on a baking sheet or air fryer tray and lightly brush or spray with oil.
  7. Bake for 15–20 minutes or air fry for 10–12 minutes until golden and crispy.
  8. Serve warm with salsa, guacamole, or vegan sour cream.

Notes

  • Warm tortillas before rolling to prevent cracking.
  • For extra crispiness, lightly oil before baking or air frying.
  • Mix in veggies or tofu for added texture and nutrients.
  • Best served fresh but can be frozen before baking.
  • To reheat, bake or air fry for 5–8 minutes until crisp again.
