Easy Tuna Steak Poke Bowls are fresh, customizable meals featuring seared or raw tuna steak served over rice and topped with vibrant vegetables, creamy avocado, and flavorful sauces. Perfect for a quick, healthy lunch or dinner.

Ingredients

  • 1 sushi-grade tuna steak (about 6 oz)
  • 1 cup cooked white or brown rice
  • 1 tbsp soy sauce or tamari
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1/2 avocado, diced
  • 1/2 cucumber, sliced
  • 1/2 cup shredded or julienned carrots
  • 1/2 cup cooked edamame (shelled)
  • 1 green onion, sliced
  • Optional toppings: sesame seeds, sriracha mayo, pickled ginger, seaweed strips

Instructions

  1. Cook rice according to package directions. Set aside.
  2. Cube or thinly slice tuna. For raw tuna, marinate in soy sauce, sesame oil, and rice vinegar for 10–15 minutes in the fridge (optional).
  3. For seared tuna, heat a skillet with a bit of oil over high heat. Sear tuna steak for 30–60 seconds per side, then slice thinly.
  4. Prepare toppings: dice avocado, slice cucumber, shred carrots, cook edamame, and slice green onion.
  5. To assemble, divide rice between two bowls. Top with tuna, avocado, veggies, and desired toppings.
  6. Drizzle with sriracha mayo or sauce of choice. Sprinkle sesame seeds on top and serve immediately.

Notes

  • Use only sushi-grade tuna for raw preparation.
  • Toss avocado with lemon or lime juice to prevent browning if prepping ahead.
  • Canned tuna is a budget-friendly alternative but will change the texture and flavor.
  • Customize with other toppings like radish, cabbage, or pineapple for variety.
