Easy Taco Egg Rolls are a crispy, cheesy fusion of tacos and egg rolls, filled with seasoned meat, melted cheese, and optional veggies. Baked or air-fried until golden, they make the perfect appetizer, snack, or twist on taco night.

Ingredients

  1. 1 lb ground beef or turkey
  2. 1 packet taco seasoning (or homemade blend)
  3. 1 small onion, finely chopped (optional)
  4. 1 1/2 cups shredded cheddar or Mexican blend cheese
  5. 12 egg roll wrappers
  6. Optional: 1/2 cup black beans, 1/2 cup corn, diced tomatoes, bell peppers, or jalapeños
  7. Cooking spray or oil (for brushing)
  8. Optional dipping sauces: salsa, guacamole, sour cream, queso

Instructions

Cook ground beef and onion in a skillet over medium heat until browned. Drain fat.

  1. Add taco seasoning and a splash of water; stir and simmer until combined. Cool slightly.
  2. Mix in shredded cheese and any optional fillings.
  3. Place an egg roll wrapper in a diamond shape. Add 2–3 tbsp filling in the center.
  4. Fold bottom corner over filling, fold sides inward, and roll tightly. Seal with water.
  5. Repeat with remaining wrappers.
  6. Air fryer: Preheat to 375°F (190°C). Spray rolls and cook 8–10 minutes, flipping halfway, until golden.
  7. Oven: Bake at 400°F (200°C) for 15–18 minutes, flipping halfway, until crispy.
  8. Cool slightly and serve with desired dips.

Notes

  • Don’t overfill the wrappers to prevent splitting.
  • Seal edges well with water for a tight roll.
  • These can be assembled ahead and frozen for later.
