Easy Stovetop Skillet Lasagna

A quick and hearty one-pan version of classic lasagna, made on the stovetop with layers of meat, noodles, sauce, and cheese. Perfect for busy weeknights, this skillet lasagna delivers all the flavor and comfort of traditional lasagna in under 40 minutes.

Ingredients

  • 1 lb ground beef (or Italian sausage)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes or 3 cups marinara sauce
  • 2 tsp Italian seasoning
  • 810 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • Fresh basil, chopped (optional for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
  2. Add ground beef and cook until browned. Season with salt, pepper, and Italian seasoning. Drain excess fat if necessary.
  3. Stir in crushed tomatoes or marinara sauce.
  4. Break lasagna noodles into bite-sized pieces and stir them into the sauce.
  5. Add enough water or broth to mostly cover the noodles. Bring to a simmer.
  6. Cover and cook 15–20 minutes, stirring occasionally, until noodles are tender.
  7. Drop spoonfuls of ricotta on top, then sprinkle with mozzarella and Parmesan. Cover and cook a few more minutes until cheese melts.
  8. Garnish with fresh basil if desired. Serve hot.

Notes

  • Stir occasionally while cooking to prevent noodles from sticking.
  • Ricotta can be substituted with cottage cheese.
  • Jarred pasta sauce works well as a shortcut.
  • For extra flavor, combine beef and sausage.
  • Great with a side salad or garlic bread.
