Easy Skillet Lasagna is a one-pan version of the classic Italian comfort food, made with broken lasagna noodles, savory meat sauce, and layers of gooey cheese—all cooked on the stovetop in under 40 minutes.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes or 2 cups marinara sauce
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups water or beef broth
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: fresh basil or parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large, deep skillet over medium heat. Add chopped onion and cook until softened, about 3–4 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add ground beef or sausage and cook until browned. Drain excess grease.
  4. Stir in tomato paste, crushed tomatoes (or marinara), Italian seasoning, salt, and pepper. Mix well.
  5. Add broken lasagna noodles and water or broth. Stir to ensure noodles are mostly submerged.
  6. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally, until noodles are tender.
  7. Remove from heat. Dollop ricotta cheese over the top.
  8. Sprinkle mozzarella and Parmesan cheese evenly over the skillet. Cover for 2–3 minutes until cheese is melted.
  9. Garnish with chopped basil or parsley if desired. Serve hot.

Notes

  • Use no-boil noodles if preferred, but reduce liquid slightly and monitor doneness.
  • Stir occasionally during cooking to prevent noodles from sticking.
  • Add chopped spinach or sautéed vegetables for extra nutrition.
  • Substitute cottage cheese for ricotta if needed.
