Easy Skillet Chicken Gyros feature juicy, lemon-garlic marinated chicken cooked in a hot skillet and wrapped in warm pita bread with fresh vegetables and creamy tzatziki sauce.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts, sliced into strips
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • Salt and black pepper to taste
  • For serving:
  • 46 pita breads
  • 1 cup diced tomatoes
  • 1/2 cup thinly sliced red onion
  • 1 cup shredded lettuce
  • 1/2 cup tzatziki sauce

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and black pepper.
  2. Add sliced chicken and toss to coat evenly. Marinate for at least 20 minutes or up to 4 hours.
  3. Heat a large skillet over medium-high heat.
  4. Cook marinated chicken in a single layer for 5–7 minutes, stirring occasionally, until fully cooked and lightly browned.
  5. Warm pita bread in a dry skillet or microwave until soft and pliable.
  6. Fill each pita with cooked chicken, diced tomatoes, red onion, lettuce, and tzatziki sauce.
  7. Fold and serve immediately.

  • Chicken thighs provide extra juiciness, but breasts work well if monitored closely.
