Ingredients
4 cups fresh rocket (arugula)
1/3 cup shaved Parmesan cheese
2 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1/2 teaspoon Dijon mustard (optional)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon toasted pine nuts (optional)
Instructions
Rinse and thoroughly dry the rocket, then place it in a large salad bowl.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard if using, salt, and black pepper.
Drizzle the dressing over the rocket just before serving.
Toss gently to coat the leaves evenly.
Sprinkle shaved Parmesan over the top.
Add toasted pine nuts if desired and serve immediately.
Notes
Dress the salad just before serving to prevent wilting.
Store undressed rocket and dressing separately for up to 2 days.
Substitute white wine vinegar for lemon juice if preferred.
Add grilled chicken or shrimp to make it a light main course.
