Easy Mozzarella Spinach Quesadilla is a quick and cheesy meal featuring crispy golden tortillas filled with melted mozzarella and tender sautéed spinach. Perfect for lunch, dinner, or a satisfying snack, it comes together in just minutes.

Ingredients

  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach
  • 1 tablespoon olive oil or butter
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Heat olive oil or butter in a skillet over medium heat.
  2. Add minced garlic and cook for 20–30 seconds until fragrant.
  3. Add fresh spinach and cook for 1–2 minutes until wilted. Season with salt and black pepper, then remove from heat.
  4. Place one tortilla flat on a clean surface.
  5. Sprinkle half of the mozzarella evenly over one side of the tortilla.
  6. Spread the sautéed spinach over the cheese and top with the remaining mozzarella.
  7. Fold the tortilla in half to form a half-moon shape.
  8. Heat a clean skillet over medium heat and place the quesadilla in the pan.
  9. Cook for 2–3 minutes per side until golden brown and cheese is melted.
  10. Remove from heat, cool slightly, slice, and serve warm.

Notes

  • Thaw and squeeze excess moisture from frozen spinach before using.
  • Add mushrooms, tomatoes, or caramelized onions for extra flavor.
  • Cook over medium heat to keep the tortilla crispy without burning.
  • Store in the refrigerator for up to 2 days and reheat in a skillet for best texture.
  • Use whole wheat or gluten-free tortillas if needed.
