Easy Macaroni Cheese is a creamy, comforting classic made with tender elbow macaroni and a rich homemade cheese sauce. Quick to prepare and made with simple pantry ingredients, it’s perfect for weeknight dinners, potlucks, or a cozy family meal.

Ingredients

  • 2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 cup shredded mozzarella cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add elbow macaroni and cook according to package directions until al dente. Drain and set aside.
  2. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute, stirring constantly, to form a smooth roux.
  3. Gradually pour in the milk while whisking continuously to prevent lumps. Cook for 3–5 minutes until the sauce thickens.
  4. Reduce heat to low and stir in shredded cheddar cheese and mozzarella if using. Stir until melted and smooth.
  5. Add salt, black pepper, and paprika if desired. Taste and adjust seasoning as needed.
  6. Add the cooked macaroni to the cheese sauce and stir until evenly coated.
  7. Serve immediately for a creamy stovetop version, or transfer to a baking dish and bake at 350°F (175°C) for 15–20 minutes until lightly golden on top.

Notes

  • For added flavor, mix in cooked bacon, ham, or shredded chicken.
  • Add steamed broccoli or peas for extra vegetables.
  • Top with buttered breadcrumbs before baking for a crispy crust.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze for up to 2 months; thaw overnight and reheat with a splash of milk to restore creaminess.
