Easy Kofta Wraps

Flavorful wraps filled with juicy, spiced kofta made from ground beef or lamb, topped with fresh vegetables and creamy yogurt sauce. A quick and satisfying Mediterranean-inspired meal.

Ingredients

  • 1 pound ground beef or lamb
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped onion
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 flatbreads or pita breads
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced cucumber
  • 1/4 cup thinly sliced red onion
  • For the Sauce:
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 small clove garlic, minced
  • Salt to taste

Instructions

  1. In a large bowl, combine ground meat, garlic, onion, parsley, cumin, coriander, paprika, salt, and pepper. Mix gently until just combined.
  2. Shape mixture into small logs or oval patties.
  3. Heat olive oil in a skillet over medium heat or preheat a grill.
  4. Cook kofta for 8–10 minutes, turning occasionally, until browned and internal temperature reaches 160°F (71°C).
  5. In a small bowl, mix Greek yogurt, lemon juice, olive oil, garlic, and salt to make the sauce.
  6. Warm flatbreads until pliable.
  7. Place kofta in the center of each flatbread.
  8. Top with lettuce, tomatoes, cucumber, red onion, and drizzle with yogurt sauce.
  9. Fold and wrap tightly before serving.

Notes

  • Avoid overmixing to keep kofta tender.
  • Can be baked at 400°F (200°C) for 15–18 minutes.
  • Store cooked kofta refrigerated for up to 3 days.
  • Freeze cooked kofta for up to 2 months.
  • Use dairy-free yogurt for a dairy-free option.
