Easy Courgette Fritters are light, crispy patties made with grated courgettes, Parmesan, and simple seasonings. Golden on the outside and tender inside, they make a delicious snack, appetizer, or light meal that’s quick and easy to prepare.

Ingredients

  • 2 medium courgettes, grated
  • 1 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tablespoons chopped fresh parsley
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. Place grated courgettes in a colander and sprinkle with salt. Let sit for 10 minutes to draw out excess moisture.
  2. Squeeze out as much liquid as possible using a clean kitchen towel or paper towels.
  3. Transfer drained courgettes to a mixing bowl.
  4. Add flour, Parmesan, egg, parsley, garlic, and black pepper. Mix until well combined.
  5. Heat olive oil in a large skillet over medium heat.
  6. Scoop spoonfuls of the mixture into the pan and flatten slightly.
  7. Cook for 3 to 4 minutes per side until golden brown and crispy.
  8. Transfer to a paper towel-lined plate to drain excess oil.
  9. Serve warm with yogurt dip, sour cream, or your preferred sauce.
