A cheesy twist on the classic shepherd’s pie, this comforting casserole layers savory ground meat and vegetables under creamy mashed potatoes topped with melted cheddar. Easy Cheesy Shepherd’s Pie is hearty, family-friendly, and perfect for weeknight dinners.

Ingredients

  • 1 1/2 lbs ground beef or ground lamb
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1/2 cup corn (optional)
  • 2 tbsp tomato paste or ketchup
  • 1 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 4 cups prepared mashed potatoes (homemade or instant)
  • 2 cups shredded cheddar cheese, divided
  • 2 tbsp butter
  • 1/4 cup milk or cream
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and sauté onions and garlic until fragrant.
  3. Add ground beef or lamb, cooking until browned. Drain excess fat.
  4. Stir in tomato paste or ketchup, Worcestershire sauce, and beef broth. Simmer until slightly thickened.
  5. Add carrots, peas, and corn. Cook until vegetables are tender. Season with salt and pepper.
  6. Transfer mixture to a baking dish and spread evenly.
  7. In a bowl, combine mashed potatoes with butter, milk or cream, and half the shredded cheddar.
  8. Spread mashed potatoes over meat mixture. Sprinkle with remaining cheese.
  9. Bake uncovered for 20–25 minutes, until cheese is melted and top is golden.
  10. Let rest for a few minutes before serving. Garnish with parsley if desired.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Cheddar is classic, but mozzarella, Monterey Jack, or blends also work.
  • Instant mashed potatoes are a convenient option.
  • For extra flavor, add sautéed mushrooms or spinach to the filling.
  • Cool meat filling slightly before topping with potatoes to prevent sinking.
