Easter Bunny Coconut Tails are an easy, no-bake Easter treat made with sweetened condensed milk, shredded coconut, and vanilla. These soft and sweet coconut balls resemble fluffy bunny tails, making them a festive addition to your Easter dessert table. Perfect for kids, parties, and gifting, they’re simple to customize with chocolate, sprinkles, or flavored extracts.

Ingredients

  • 2 cups shredded coconut (desiccated or flaked) + extra for coating
  • ½ cup sweetened condensed milk
  • ½ teaspoon vanilla extract
  • ¼ cup powdered sugar
  • ½ cup white chocolate (optional, for drizzling)

Instructions

  1. In a mixing bowl, combine shredded coconut, sweetened condensed milk, vanilla extract, and powdered sugar. Mix well.
  2. Use a small cookie scoop or hands to form the mixture into bite-sized balls.
  3. Roll each ball in additional shredded coconut until fully coated.
  4. Place on a parchment-lined tray and refrigerate for at least 30 minutes to set.
  5. (Optional) Melt white chocolate and drizzle over the coconut tails for extra sweetness.
  6. Serve chilled or at room temperature. Enjoy!

Notes

  • If the mixture is too sticky, add more shredded coconut or chill before rolling.
  • For a festive look, use pastel-colored coconut or sprinkles.
  • Store in an airtight container in the fridge for up to 5 days or freeze for up to 2 months.
