Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup buttermilk
1 large egg
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
Oil for frying (vegetable or canola)
Powdered sugar, for dusting
Instructions
In a large bowl, whisk together the flour, baking powder, sugar, cinnamon, and salt.
In a separate bowl, combine the buttermilk, egg, vanilla extract, and melted butter.
Gradually stir the wet ingredients into the dry ingredients until a soft dough forms.
Turn the dough onto a floured surface and gently knead until smooth.
Roll out the dough to about ½ inch thickness and cut into small squares or rectangles.
Heat oil in a deep skillet or pot to 350°F (175°C).
Fry the beignets in batches until golden brown on both sides, about 2 minutes per side.
Remove with a slotted spoon and drain on paper towels.
Dust generously with powdered sugar while warm.
Serve immediately for the best texture and flavor.
Notes
Add a pinch of nutmeg or cardamom for a deeper spice profile.
Use brown sugar instead of granulated sugar for a caramelized taste.
Drizzle with glaze for extra sweetness.
Mix in mini chocolate chips for a dessert twist.
Serve with fruit preserves or chocolate sauce for dipping.
