Dutch Oven or Slow Cooker Guinness Beef Stew is a rich, hearty, and flavorful dish featuring tender beef simmered slowly, along with root vegetables and aromatic herbs. This comforting stew is perfect for chilly days and special gatherings, bringing deep, robust flavors to your table.

Ingredients

  1. 3 pounds beef chuck roast, cut into 1-inch cubes
    Salt and pepper to taste
    3 tablespoons olive oil
    1 large onion, chopped
    3 cloves garlic, minced
    4 carrots, sliced
    3 celery stalks, sliced
    3 potatoes, peeled and diced
    2 cups beef broth
    2 tablespoons tomato paste
    2 teaspoons dried thyme
    2 bay leaves
    1 tablespoon Worcestershire sauce
    Fresh parsley for garnish

Instructions

  1. For Dutch Oven:
    Preheat oven to 325°F (165°C). Season beef with salt and pepper. Heat olive oil in Dutch oven over medium-high heat. Brown beef in batches, setting aside.
    Sauté onions and garlic in the same pot until softened.
    Return beef to pot. Add carrots, celery, potatoes, Guinness, beef broth, tomato paste, thyme, bay leaves, and Worcestershire sauce. Stir well.
    Cover and bake for 2.5 to 3 hours until beef is tender.
  2. For Slow Cooker:
    Season and brown beef in a skillet, then transfer to slow cooker.
    Add vegetables, Guinness, broth, tomato paste, herbs, and Worcestershire sauce to slow cooker.
    Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef is tender.
  3. Remove bay leaves, adjust seasoning, garnish with parsley, and serve hot.

Notes

  1. Add sliced mushrooms for extra earthiness.
  2. Thicken stew by mixing cornstarch with water and stirring in at the end.
  3. Add cayenne or smoked paprika for spicier flavor.
