Dorito Casserole is a fun and flavorful dish that combines the crunch of Doritos with layers of seasoned ground beef, creamy cheese, and savory ingredients. Perfect for weeknight dinners, potlucks, or any time you’re craving a cheesy comfort meal.

Ingredients

  1. 1 lb ground beef
    1 medium onion, chopped
1 packet taco seasoning mix (or homemade seasoning)
1 can (10.5 oz) cream of chicken soup (or cream of mushroom)
    1/2 cup sour cream
1 can (10 oz) diced tomatoes with green chilies (or just diced tomatoes)
4 cups crushed Doritos (about 1 bag)
2 cups shredded cheddar cheese (or Mexican blend)
1/2 cup green onions or chopped cilantro for garnish (optional)

Instructions

Preheat the oven to 350°F (175°C).

  1. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat. Add the chopped onion and cook for another 2-3 minutes until softened.
  2. Stir in the taco seasoning mix and follow the package instructions, simmering for 3-4 minutes.
  3. Add the cream of chicken soup, sour cream, and diced tomatoes (with juice) to the beef mixture. Stir until well combined and bring to a simmer. Cook for 5 minutes.
  4. In a greased 9×13-inch baking dish, spread half of the crushed Doritos in an even layer. Pour half of the beef mixture over the Doritos, followed by half of the shredded cheese. Repeat the layers with the remaining Doritos, beef mixture, and cheese.
  5. Cover with aluminum foil and bake for 20-25 minutes. Remove the foil and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  6. Let the casserole cool for a few minutes before serving. Garnish with green onions or cilantro if desired.

Notes

  1. Add more veggies: Incorporate bell peppers, corn, or black beans into the beef mixture for added texture and flavor.
  2. Ground turkey or chicken: Substitute the ground beef with ground turkey or chicken for a leaner option.
  3. Spicy version: Add jalapeños, hot sauce, or diced green chilies to increase the heat.
  4. Cheese variations: Use Monterey Jack, pepper jack, or Velveeta for a different cheese flavor.
  5. Storage: Leftover Dorito Casserole can be stored in an airtight container in the refrigerator for up to 3-4 days.
  6. Reheating: Reheat in the oven at 350°F (175°C) for 10-15 minutes or microwave in 1-minute intervals, stirring occasionally.
