Doner Kebab is a flavorful and juicy dish made with warmly spiced meat roasted until tender and thinly sliced for serving. This homemade oven version recreates the classic street food favorite, perfect for wrapping in flatbread or serving with fresh vegetables and creamy sauces.

Ingredients

  • 2 pounds ground lamb or ground beef
  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons plain yogurt
  • 1 tablespoon olive oil
  • Pita or flatbread, for serving
  • Shredded lettuce, for serving
  • Sliced tomatoes, for serving
  • Sliced red onion, for serving
  • Tzatziki or garlic sauce, for serving

Instructions

  1. Preheat the oven to 375°F. Line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, combine ground meat, grated onion, garlic, cumin, coriander, paprika, oregano, cinnamon, salt, black pepper, yogurt, and olive oil. Mix thoroughly until well combined.
  3. Press the meat mixture firmly into the prepared loaf pan, smoothing the top.
  4. Bake for 50 to 60 minutes until fully cooked and browned on top.
  5. Remove from the oven and let rest for 10 to 15 minutes.
  6. Carefully remove from the pan and slice thinly using a sharp knife.
  7. For crispier edges, arrange slices on a baking sheet and broil for 2 to 3 minutes.
  8. Serve in warm pita or flatbread with lettuce, tomatoes, red onion, and your favorite sauce.

  • Mix lamb and beef for richer flavor.
