A creamy, healthy twist on traditional deviled eggs — these Deviled Avocado Eggs replace mayonnaise with ripe avocado for a rich texture and fresh flavor packed with healthy fats and protein.

Ingredients

  • 4 large eggs, hard-boiled
  • 1 ripe avocado
  • 1 teaspoon lime or lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder or 1/2 clove minced garlic (optional)
  • Salt and pepper, to taste
  • Paprika or chili flakes, for garnish
  • Fresh herbs (chives or cilantro), for garnish

Instructions

  1. Slice the hard-boiled eggs in half lengthwise and carefully remove the yolks.
  2. Place the yolks in a small bowl and mash them with a fork.
  3. Add the avocado, lime juice, and Dijon mustard to the yolks.
  4. Mix until smooth and creamy, seasoning with salt, pepper, and garlic powder.
  5. Spoon or pipe the avocado-yolk mixture back into the egg white halves.
  6. Garnish with paprika, chili flakes, or fresh herbs.
  7. Serve immediately for the freshest flavor.

Notes

  • To prevent browning, press plastic wrap directly against the avocado mixture surface before chilling.
  • Use ripe but firm Hass avocados for the best texture and taste.
  • Assemble just before serving to maintain freshness and color.
