Ingredients
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
3/4 cup dark chocolate chunks or chips (70% cocoa or higher)
3/4 cup roasted, unsalted pistachios, chopped
Smoked sea salt, for finishing
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream the softened butter with brown sugar and granulated sugar until light and fluffy.
Add the egg and vanilla extract and mix until smooth and well combined.
Gradually stir in the dry ingredients until a soft dough forms.
Fold in the chopped pistachios and dark chocolate chunks until evenly distributed.
Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheet, spacing about 2 inches apart.
Top each cookie with a few flakes of smoked sea salt.
Bake for 10–12 minutes, or until edges are set and centers look slightly underbaked.
Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
