Ingredients

6 oz dark chocolate (70% cocoa or higher), chopped,1/2 cup unsalted butter (or coconut oil for dairy-free),2 large eggs,1/3 cup granulated sugar,1/2 teaspoon vanilla extract,1/4 teaspoon salt,Optional: 1/2 teaspoon espresso powder, berries, whipped cream, or flaky sea salt for garnish

Instructions

Preheat oven to 350°F (175°C). Grease or line a small baking dish or 4–6 ramekins.,Melt chocolate and butter together in a heatproof bowl over a double boiler or in the microwave in 20-second bursts, stirring until smooth.,In a separate bowl, whisk eggs and sugar until light and slightly thickened. Stir in vanilla and salt (and espresso powder, if using).,Gradually whisk the melted chocolate into the egg mixture until fully combined.,Pour the batter into the prepared dish or ramekins.,Bake for 18–22 minutes, or until edges are set and the center is slightly jiggly.,Let cool slightly before serving. Top with berries, whipped cream, or a dusting of cocoa powder, if desired.

Notes

For a flourless cake version, add 1 tablespoon of cocoa powder to the batter.,Use ramekins and reduce bake time slightly for molten lava-style cakes.,This dessert is naturally gluten-free if no flour is added.,Best served warm, but can also be enjoyed at room temperature or chilled.
