Dairy-Free Shrimp Scampi is a quick and flavorful dish featuring tender shrimp sautéed in olive oil with garlic, lemon juice, and white wine. This light, buttery-tasting seafood classic skips the dairy without sacrificing taste—perfect for weeknights or elegant meals.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup white wine (or chicken broth)
  • 2 tbsp fresh lemon juice
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • Cooked pasta or rice, for serving (optional)
  • Lemon wedges, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook for about 30 seconds until fragrant.
  3. Add shrimp in a single layer. Season with salt, pepper, and red pepper flakes if using.
  4. Cook shrimp for 1–2 minutes per side until pink and opaque.
  5. Pour in white wine (or chicken broth) and lemon juice. Simmer for 2 minutes to reduce slightly.
  6. Remove from heat and sprinkle with fresh parsley.
  7. Serve immediately over pasta, rice, or with crusty bread. Garnish with lemon wedges.

Notes

  • Use gluten-free pasta or rice for a gluten-free meal.
  • Don’t overcook the shrimp—they cook quickly and can become rubbery.
  • Use veggie broth instead of wine or chicken broth for a vegan-friendly option.
  • Prep ingredients in advance for a quick 15-minute cook time at dinner.
  • Add sautéed vegetables like spinach or cherry tomatoes for extra nutrients.
