Curry Fries are a flavorful twist on classic fries, seasoned with aromatic curry spices or topped with a rich curry sauce. Whether dry-rubbed or smothered, these fries are perfect for spice lovers and make a bold, satisfying snack or side.

Ingredients

  • 4 Russet potatoes or 1 bag frozen French fries
  • Vegetable oil (for frying or baking)
  • Salt, to taste
  • 2 tbsp curry powder or 1 tbsp curry paste
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/2 cup coconut milk or cream (optional, for sauce version)
  • 2 tbsp tomato paste or 1/2 cup diced tomatoes
  • Optional: 1/2 tsp chili powder, cumin, turmeric, paprika
  • Optional toppings: chopped cilantro, lime wedges, yogurt drizzle, pickled onions

Instructions

  1. Prepare the fries:
    Wash, peel (optional), and cut potatoes into fries. Soak in cold water for 30 minutes, then drain and dry. Fry at 300°F for 4–5 mins, then at 375°F for 2–3 mins, or bake at 425°F for 25–30 mins until crispy. Use frozen fries if preferred and cook as directed.
  2. For dry curry fries:
    While fries are hot, toss with curry powder and optional spices like paprika or garlic powder. Add salt to taste.
  3. For curry gravy fries:
    In a skillet, sauté onion, garlic, and ginger in oil until soft. Stir in curry powder or paste and cook for 1 min. Add tomato paste or diced tomatoes and cook for 2–3 mins. Stir in coconut milk and simmer 5–10 mins until thickened. Season to taste.
  4. Assemble:
    Arrange fries on a plate. Spoon warm curry sauce on top (if using). Garnish with cilantro, lime juice, or yogurt.
  5. Serve immediately while hot and crispy.

Notes

  • For extra crispiness, use double-frying or air frying techniques.
  • Adjust spice level by using mild or hot curry powder and adding chili powder to taste.
  • Serve curry sauce on the side to prevent soggy fries.
  • Great with sweet potato fries or loaded with proteins like chickpeas or grilled chicken.
  • Sauce can be made ahead and refrigerated for 3 days.
