Cucumber Sandwiches are a light and refreshing classic appetizer, perfect for tea time or elegant gatherings. Thinly sliced cucumbers are layered on soft bread with butter or cream cheese for a cool, crisp bite.

Ingredients

  • 1 English cucumber
  • 8 slices white or whole grain sandwich bread
  • 4 tablespoons unsalted butter or cream cheese, softened
  • Salt to taste
  • Optional: 1 tablespoon chopped fresh dill or chives
  • Optional: 1 teaspoon lemon juice
  • Optional: black pepper to taste

Instructions

  1. Peel the cucumber (optional) and slice it very thin using a mandoline or sharp knife.
  2. Lay the cucumber slices on paper towels and sprinkle lightly with salt. Let sit for 10–15 minutes, then pat dry.
  3. Trim the crusts off the bread for a traditional presentation.
  4. Spread softened butter or cream cheese evenly on each slice of bread.
  5. Arrange cucumber slices in a single layer on half of the bread slices. Sprinkle with herbs, lemon juice, or black pepper if desired.
  6. Top with the remaining bread slices, spread-side down.
  7. Gently press and cut each sandwich into halves, quarters, or triangles.
  8. Serve immediately or chill briefly for firmer sandwiches.

Notes

  • Salt the cucumber slices and pat them dry to avoid sogginess.
  • Use soft, fresh bread for the best texture.
  • For added flavor, mix herbs into cream cheese or use flavored butter.
  • Cover prepared sandwiches with a damp paper towel and wrap if making ahead.
  • Best served cold or at room temperature—do not freeze or reheat.
