Cucumber Cream Cheese Bites are a refreshing and easy-to-make appetizer that combines crisp cucumber slices with a creamy, flavorful filling. Perfect for light snacks, parties, or as a healthy snack option, these bites are as simple as they are satisfying.

Ingredients

  1. 1 cucumber, sliced into rounds
    4 oz cream cheese, softened
2 tablespoons Greek yogurt (or sour cream)
    1 tablespoon fresh dill, chopped
    1 teaspoon garlic powder
    ¼ teaspoon salt
    ¼ teaspoon black pepper
Optional: Fresh chives or parsley for garnish

Instructions

Slice the cucumber into ½-inch thick rounds. Pat dry with a paper towel to remove excess moisture.

  1. In a bowl, combine the softened cream cheese, Greek yogurt (or sour cream), dill, garlic powder, salt, and pepper. Mix until smooth and creamy.
  2. Using a spoon or piping bag, spread or pipe a generous amount of the cream cheese mixture onto each cucumber slice.
  3. Garnish with chopped chives or parsley if desired. Serve immediately, or refrigerate for up to 2 hours before serving.

Notes

  1. For an herb-infused version, mix in fresh herbs like basil, thyme, or tarragon.
  2. For a spicy kick, add a dash of cayenne pepper or a few dashes of hot sauce to the cream cheese mixture.
  3. Blend in some shredded cheddar or Parmesan cheese for a richer flavor.
  4. Top with a small piece of smoked salmon, red pepper, or radish for additional flavor and color.
