Cucumber Bites with Cream Cheese are refreshing, bite-sized snacks made with crisp cucumber rounds topped with a creamy, herbed cream cheese filling. Perfect for parties, brunches, or healthy snacking, they’re easy, elegant, and customizable.

Ingredients

  • 1 large English cucumber (or 2 Persian cucumbers)
  • 6 oz cream cheese (softened)
  • 1 tbsp fresh dill or chives, chopped
  • 1/2 tsp garlic powder or onion powder (optional)
  • 1 tsp lemon juice
  • Salt and black pepper, to taste
  • Paprika or Everything Bagel seasoning (optional, for topping)

Instructions

  1. Slice the cucumber into 1/2-inch thick rounds. Optional: Use a small spoon or melon baller to gently scoop out a shallow center in each slice for filling.
  2. In a small bowl, mix the softened cream cheese with lemon juice, chopped herbs, garlic/onion powder (if using), salt, and pepper until smooth and well combined.
  3. Transfer the mixture to a piping bag or use a spoon to top each cucumber slice with a small amount of the cream cheese mixture.
  4. Garnish with extra herbs, a dash of paprika, or Everything Bagel seasoning.
  5. Serve immediately or refrigerate for up to a few hours before serving.

Notes

  • Use a piping bag with a star tip for a decorative presentation.
  • These are best served fresh to keep cucumbers crisp.
  • Chilling the cucumber slices for 10–15 minutes before topping adds extra crunch.
