Ingredients

  1. ½ cup unsalted butter, softened
    ¾ cup creamy peanut butter
    ¾ cup light brown sugar, packed
    ¼ cup granulated sugar
    1 large egg
    2 teaspoons vanilla extract
    ¼ teaspoon almond extract
    1½ cups all-purpose flour
    ½ teaspoon baking soda
    ⅓ teaspoon salt
    Additional granulated sugar for rolling

Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. Cream the butter and sugars: In a large mixing bowl, beat together the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  2. Add Wet Ingredients: Beat in the egg and vanilla extract until well combined.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Mix Dry Ingredients into Wet: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Shape the Cookies: Scoop out approximately ¼ cup of dough for each cookie and roll into a ball. Roll in additional granulated sugar to coat. Flatten each dough ball slightly with your hand or spoon.
  6. Bake: Bake for 8–10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  1. Using natural peanut butter may affect the texture, so it’s best to use creamy peanut butter for optimal results.
  2. If you’d like, you can add chocolate chips or peanut butter chips for added texture and flavor.
