Ingredients

  • white sandwich bread
  • unsalted butter
  • Dijon mustard
  • ham slices
  • Gruyère cheese, grated
  • unsalted butter (for béchamel)
  • all-purpose flour
  • milk
  • salt
  • black pepper
  • nutmeg
  • eggs
  • extra grated Gruyère cheese

Instructions

  1. Melt butter in a saucepan, whisk in flour, and cook briefly to form a roux.
  2. Slowly whisk in milk and cook until thickened, then season with salt, pepper, and nutmeg.
  3. Lightly toast the bread slices.
  4. Spread butter and Dijon mustard on the bread.
  5. Layer ham and Gruyère cheese between slices to form sandwiches.
  6. Place on a baking sheet and spoon béchamel over the top.
  7. Sprinkle extra Gruyère cheese over each sandwich.
  8. Bake until cheese is melted and bubbly.
  9. Cook eggs in a skillet to desired doneness.
  10. Top each sandwich with a cooked egg and serve immediately.
