Croque Madame Sandwiches

A classic French Croque Madame featuring crispy toasted bread layered with ham and melted Gruyère, topped with creamy béchamel sauce and a perfectly cooked egg. Rich, savory, and indulgent.

Ingredients

  • 4 slices bread (brioche or white sandwich bread)
  • 4 slices ham
  • 1 cup Gruyère cheese, grated
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 tbsp Dijon mustard (optional)
  • 2 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, melt butter over medium heat. Whisk in flour to form a paste, then gradually add milk, whisking until smooth and thickened. Season with salt, pepper, and nutmeg.
  3. Lightly toast the bread slices and spread Dijon mustard if using.
  4. Assemble sandwiches with ham and half of the Gruyère cheese between bread slices.
  5. In a skillet, melt a little butter and cook sandwiches until golden on both sides.
  6. Place sandwiches on a baking sheet, spoon béchamel sauce over the top, and sprinkle with remaining cheese.
  7. Bake until cheese is melted and bubbly.
  8. Meanwhile, cook eggs sunny-side up or to preference.
  9. Remove sandwiches from oven, top each with an egg, and serve immediately.

Notes

  • Use Gruyère for authentic flavor, but Swiss or Emmental work well.
  • For Croque Monsieur, omit the egg.
  • Add mushrooms or spinach for variation.
  • Reheat in the oven to maintain crispness.
  • Prepare béchamel ahead for convenience.
  • Serve with a light salad or potatoes.
